I have mentioned the Frying Pan Pizza Kits that I offer each week briefly before but thought that I would use this journal to tell you a little more as well as share a recipe for a dip which is perfect served alongside a pizza with some crunchy veggie crudites.

So, about the pizzas…how great would it be to know you have dinner ordered, sorted & prepared fresh to have delivered every week, fortnightly or once a month on a Friday? I know, right??! Yes please! 

Stay in & keep cosy knowing you will have everything you will need delivered to your doorstep. Each kit comes with everything you need to make a couple of uber pizzas in the comfort of your own home. Each kit includes 2 x Homemade Dough balls, San Marzano Tomato sauce, Mozzarella & Fresh Basil – all you need is a frying pan & grill. You can also add on some extras like seasonal toppings which change each week (think soft oozy picante soft Chorizo, Maple Roast Squash, Garlicy Courgette Ribbons, Ham Hock & Baked Apple....) And, if you need a sweet hit at the end of your meal, I also stock MEGA Salted Caramel & Pecan Brownies from Creekside Cakes.

These Pizza Kits are something we started in Lockdown 1.0 to go into our Minno At Home range – something I wanted to encourage alongside developing new ways for folk to enjoy my food at home was to search for a way that I could share the love, a way to give back to the community & use the business as a platform to help others. And so, for every Pizza Kit delivered I donate a portion of the sales to two local charities who are doing great things. Both of them are based in Whitstable they are Pantry Project & Growbaby.

Now onto that Beetroot & Walnut Yoghurt Dip – this is so lovely & mega easy, you’ll see everything is measured out below in dollops, spoonfuls & sprinkles. There are no exact measurements, tweak as your tastebuds tell you! This is a lovely seasonal recipe, enjoy.

Beetroot & Walnut Yoghurt Dip 

Makes a nice bowlful

What you will need

4 heaped dessert spoons of Full Fat Greek Yoghurt

2 Cooked Beetroot (you can buy these in the supermarket, just make sure not to get the ones in vinegar)

1 handful of Walnuts (or Pecans work well too)

A sprinkle of salt

A squeeze of lemon juice

For the crudites – here are some good vegetables to chop up raw to use to dip into the yoghurt; Carrots, Chicory, Cucumber, Peppers, Cauliflower (I loved Romanesco if you can get your hands on one), Radishes……

To add on top

1 handful of Pickled Beetroot (sliced or diced thinly)

A sprinkle of Fresh Dill

Kit

A processor or stick blender

What you need to do

This recipe is so easy & quick! Place all of your ingredients into the bowl of your processor (or separate bowl if using a stick blender) then whizz on high until you have a smooth puree. Taste & add more salt & lemon juice if needed.

 

Spoon this into a serving bowl & sprinkle over the pickled beet & dill.

 

Dollop into a bowl & surround with chunks of raw veggies to dip in then serve with your pizza!
